how your honey is made
It takes 36 weeks, 7 maybe 8 bee stings, the occasional chase by a random farmer's dog and absolutely no shortcuts to quality to make a honey season.

ABOUT YOUR BEEKEEPER
Stung 217 times & still loving it!
It was 2014 and in a moment of madness, I bought 2 beehives and kept them in my backyard.
Today, i'm still fascinated by my lovely bees and have since learned to raise my own queen bees. My wife still keeps the first jar of honey we harvested.

Honey questions answered
Jarrah and Manuka are both highly prized but also...
Jarrah honey has a lower GI than other kinds of honey and sugar, it is darker and more syrup-like. Honey experts have described the taste as that of caramel and less sweet than more common types of honey - this is from its lower levels of glucose. Instead, Jarrah honey contains higher levels of fructose, a type of fruit sugar.
Jarrah honey is more natural tasting.
Manuka's active component methylglyoxal gives it a slightly medicinal taste. The active component of Jarrah honey comes from hydrogen peroxide which doesn’t influence the taste. Hydrogen peroxide is perfectly natural in honey and harmless to human tissue and the gut lining.
Jarrah only flowers once every 2 years.
Manuka trees are widely cultivated in New Zealand and enjoy a consistent flowering cycle.Jarrah trees are native to Western Australia and flower once every 2 years, limiting their harvest and market availability.
Jarrah honey has higher antimicrobial potency.
When it comes to medicinal properties, Jarrah honey has one of the highest potencies of antimicrobial activity in the world.
The antimicrobial properties of Jarrah honey come from hydrogen peroxide, while Manuka comes from its active component, methylglyoxal. Because Manuka is non-peroxide, Jarrah honey has up to 50% more antimicrobial potency than Manuka.
Total Activity (TA) measures the antimicrobial activity of honey.
Jarrah and Red Gum honey are graded according to their TA, the higher the TA number, the greater the antimicrobial power. Bee Bee Natural's honey is among the highest-rated TA honey on the market. May 2022 batch samples tested returned TA 54% for Red Gum and TA 63% for Jarrah, beyond the linear range of the standard curve of TA 35% (medicinal-grade), distinguishing this season's honey batch as a Récolte Rare or rare harvest.
TA 10+
Enjoy a teaspoon daily to promote good general health and wellbeing.
TA 20+
If you’re feeling less than good, defend yourself with a higher TA 20+ honey.
TA 30+
TAs above 30 is medicinal-grade honey and highly rare and precious. When we need extra immune support, TA 30+ gives your immune system a super boost.
Honey lasts indefinitely...
If you keep your honey jar tight, away from direct sunlight and avoid introducing moisture into the jar, it can last indefinitely at room temperature in Singapore.
Crystallisation is a natural occurring process...
In pure honey, crystallisation is a naturally occurring process in which the honey becomes thicker and harder in texture. Honey that crystallises is widely considered to be superior honey as it is “real”, unpasteurised and hasn’t been heavily processed. My honey is raw and wild in the sense that minimal filtration and processing are performed.
